• 2 cups raw sunflower seeds

  • 1 tbsp ground cinnamon

  • 1 tsp ground ginger

  • ½ teaspoon ground cardamon

  • pinch sea salt

  • 1 cup pitted Medjool dates

  • 2 tbsp extra-virgin olive oil

  • 1-2 tbsp pure maple syrup or raw honey

  • unsweetened shredded coconut


Step 1
Place sunflower seeds, spices & salt in a food processor and process until finely ground.

Step 2
Add pitted dates & oil. Process until combined & sticky and try rolling into a ball. If not holding together add maple syrup and process again.

Step 3
Once the mixture holds together then roll into balls and roll in shredded coconut. You can then store in the refrigerator for up to 2 weeks.
